
Some of the other methods of food storage using the preservation techniques are: packing
the items in a vacuum environment normally in an air tight container. This process called
as vacuum packing is commonly used for storing nuts to reduce the spoilage caused by
oxidation. Salting is a process done on meat and fish products. The salt curing draws
moisture from the meat and thus slowing the process of spoilage. Sugar is used in the
preservation of fruits which is done in the form of syrup. They are also cooked in sugar
to the point of crystallization and then stored. Cherries are stored in sugar but sold
after removing it from the syrup. Pickling is the method where the food is preserved in
an eatable anti-microbial liquid. There are two types of pickling by which the
food storage is done.
The chemical pickling and the fermentation pickling. Some examples forchemically
pickled items are cucumbers, peppers, eggs etc. Examples for fermentation
pickling are sauerkraut, nukazuke, kimchi etc. The commercial pickles include
preservatives like sodium benzoate to increase the shelf life. Canning and bottling
involves the cooking of the food and then preserving it in sterile jars.
